Today I had water sans E- Coli

First things first, let’s announce the winner for the movie tommrow!

Ughmazing, it should be a barrel of laughs.

In other news, the birthday celebrations are starting early this year.

I went out with some two of my closest friends and as always our time spent together is best descibed in 3 simple words.

Joie de vivre.

Breaking bread, raising a glass and  sharing whole-hearted laughter.

Our meeting was not planned, it just happened, I love it when that happens.

We  went to a great little restaurant named Segovia, shared some tapas, then some Paella, a pitcher of Sangria and finally a piece of cake.

Everything tasted amazing, how can it not in such great company?

We had a charming, witty server who I assumed also owned the restaurant.

He was so funny, he came by and poured water into our glasses and said “and for you some water without E-coli.” (that’s just one of the many things he said)

As soon as you entered the restaurant  it was filled with a “Spanish ambience”,  complete with classical guitar caressing your ears as your taste buds went on a Spanish adventure.

I would go back with a bigger group and when they have live entertainment.

(Hint hint, Flamenco dancers or a live guitarist)

I’m gonna leave you with some spanish guitar, played by the one and only Andres Segovia.

You’ll remember I wrote about food, in particular Ratatouille. Well I’ll have you know that in the book i’m still currently reading by Elizabeth bard (Lunch in Paris a Love story with Recipes) I came across a recipe for none other than..

I think I actually uttered “eeep!” and then I started to sauté

( to jump, not literally. The joke was probably funnier in my head)

Sheer concidence I sounded like Remy from the actual movie “Ratatouille”?

I’m gonna go with happy accident =)

Bad jokes aside let’s get to that recipe shall we?

You’ll need:

  • 1/2 cup olive oil
  • 2  1/2 pounds onions (  7-8 medium) Thickly sliced
  • 1  1/2 pounds eggplant (2 small) cut into vertical chunks about 1/2 inch by 2 inches
  • 1 pound zucchini (4 small) quartered the long way and cut into thirds
  • 2 pounds sun ripened tomatoes (6 medium) coarsely chopped, with thier juice
  • 5-6 sprigs fresh thyme
  • 1/8 teaspoon of saffron
  • 1 cube sugar

Warm the oil over medium heat in your largest frying pan. Add the onions. sauté, stirring occasionally until they are wilted and just begining to colour (about 25 mins)

Add the eggplant. stir to coat. sauté 10 mins

Add the peppers, sauté 10mins, the peppers will release some water, which will start the sauce.

Add the Zucchini, sauté 10 mins

Add the tomatoes and fresh tyme. heat until the tomatoes release some juice. Dissolve the saffron and sugar in the sauce. Cover. Cook for 10 mins. Leave to cool.

Yeild: Serves 8
